One onionfour cloves garlictwo carrotsone stalk celeryone red pepperthree potatoesone bunch kale1/2 lb chorizo or linguice Portuguese sausage6 cups stockcannelini beans or kidney beanssaute onions & garlic until transparent, add celery , red pepper &sausage, saute some more, add chopped kale cook until wilted. Addstock & bring to boil, reduce heat & simmer for 20 minutes. Add potatoes & carrots & beans cook until potatoes are done. Add (sea)salt & pepper to taste.This is an approximation of someone else’s’ approximation of a recipe. It seems (in my experience) that there is no way to screw this up- it always tastes great! It would probably taste good with no sausage & vegetable stock as well, though I don’t know if I could ever bring myself to leave it out.
