Potluck Recipe of the Week: Baby Sea Dragon Salad

Baby Sea Dragon Salad

  • beets, peeled and grated
  • carrot, peeled and sliced in ribbons with peeler
  • mung bean sprouts, purchased, or sprout your own, about 5-7 days (these are the sea dragons)
  • fresh lemon juice
  • olive oil
  • sea salt
  • fresh ground pepper
  • sesame seeds
  • sea dragon scales (optional)

Toast sesame seeds in a dry pan on medium heat until they begin to pop. Crush seeds in a grinder, mortar and pestle or with the back of a spoon in a bowl, to release their aroma. Stir ingredients together, saving mung beans – arrange them on top as though they are swimming across a red sea. Sprinkle toasted sesame seeds on top. Catch baby sea dragons with chopsticks. Chomp mercilessly!
