A great and easy summer salad
- 1 pound or so of beets
- 2 Tbs lemon juice
- 1-2 tsp cider vinegar
- 1Tbs minced onions or scallions
- 1 Tbs toasted sesame seeds
- salt and ground pepper to taste
Toast in a covered pan over a flame for just few minutes. When you hear popping sounds, take off heat. Cool sesame seeds before adding to beets.
Boil beets in water until tender; allow to cool. Peel and slice; your hands will turn very nice fuchsia color, wear gloves if this is not desirable.
Add remaining ingredients. Chill for at least 30 minutes.
